HEALTHY CAKE WITH YOGURT AND PEACHES: INGREDIENTS (MAKES 4 SERVINGS)
Prep time: 10 minutes / Baking time: 25 minutes
- 200 g plain yogurt
- 3 eggs
- 50 g sugar
- 40 g flour
- 6 g baking powder
- 1 large can peaches in light syrup
HEALTHY CAKE WITH YOGURT AND PEACHES: PREP
Preheat the oven to 356°F (180°C). Separate the egg yolks from the egg whites. Mix together the sugar and egg yolks. Add the yogurt, flour and baking powder. In a separate bowl, whisk the egg whites until stiff peaks form and add them to the batter. To make the eggs easier to form into peaks, whip them in a plastic ramekin with a pinch of salt.
Pour the peaches into the bottom of a cake pan. Pour in the batter. Bake for 25 minutes. Remove from the pan and let your healthy cake cool. Place it in the fridge before serving.
FizzUp tip: You can use slices of fresh pear instead of peaches in light syrup.
HEALTHY CAKE WITH RASPBERRIES, LEMON AND CHIA SEEDS: INGREDIENTS (MAKES 4 SERVINGS)
Prep time: 20 minutes / Baking time: 30 minutes
To get the proportions right, use a single 75g-serving of yogurt (use the container to measure the ingredients).
- 1 plain yogurt
- 2 containers sugar
- 3 containers flour
- 6 g baking powder
- 3 eggs
- ¼ container rapeseed or sunflower seed oil
- A few drops vanilla extract
- Juice and finely grated zest from ½ lemon (according to taste)
- 2 to 3 tablespoons chia seeds
- 2 to 3 containers raspberries

Preheat the oven to 356°F (180°C). In a large bowl, stir together the yogurt, sugar, flour, drops of vanilla extract and baking powder. Pour in the lemon juice, then add the eggs to the batter. Stir together until the batter is consistent, then add the oil. The last step is to add the lemon zest, chia seeds and raspberries. Add the lemon zest and chia seeds directly to the batter.
Grease a cake pan. Pour in the healthy cake batter and then add the fruit. Lightly press the raspberries into the batter. Adding each raspberry by hand helps keep the fruit intact. Bake for 30 minutes. When the blade of a knife comes out clean, the cake is done.
FizzUp tip: To try something different, you can use red currants (for more tartness) or blueberries instead of raspberries.
CHOCOLATE MARBLE CAKE WITH APPLESAUCE: INGREDIENTS
Prep time: 20 minutes / Baking time: 40 minutes
- 1 plain yogurt (125g)
- 75 g cornflour (US)/cornmeal (UK)
- 75 g almond meal
- 50 g oats
- 100 g apple sauce
- 100 g sugar (50 g coconut sugar and 50 g raw sugar)
- 11 g baking powder
- 3 eggs
- ½ teaspoon vanilla powder
- 120g dark chocolate (70% cocoa)
CHOCOLATE MARBLE CAKE WITH APPLESAUCE: PREP

Preheat the oven to 356°F (180°C). Separate the egg yolks from the egg whites. Mix the applesauce with the sugar, then add the rest of the dry ingredients (flour, almond meal, oats and baking powder). Mix well. Add the yogurt and egg yolks to the batter.
Meanwhile, whisk the egg whites until stiff peaks form and add them to the batter. Pour ⅓ of the batter into another mixing bowl (for the chocolate), leaving ⅔ of the batter in the other bowl to leave plain. Add the vanilla powder to the plain batter. Melt the dark chocolate in a double boiler, then mix it with the ⅓ of the batter set aside. Grease a cake pan and alternate layering the two batters as you pour them. Bake for 40 minutes.
FizzUp tip: For even richer flavor, melt 40 g of dark chocolate in a double boiler as a super easy frosting. Add 2 tablespoons of powdered sugar (aka icing sugar). All you have to do now is let your marble cake cool before covering it with frosting. Sheer delight!
